Hot Cross Buns with Blue Band

For Buns

  • 1 3/4 oz (50 g) Blue Band Margarine
  • 2 1/4 lb flour
  • 7 oz sugar
  • 4 oz mixed fruits
  • 1 tsp cinnamon
  • 1 tbsp (2 sachets) instant yeast
  • 1 tbsp salt
  • 1 oz milk powder
  • 2 cups cold water
  • 1 tbsp vanilla essence (add to water)
  • Yellow food colouring (add to water)

For Icing Cross

  • 1 sachet icing sugar
  • 1-2 egg whites


Mix all the Bun ingredients into a smooth well developed dough.
Divide the dough into 2-oz pieces, ball smoothly and place 4 inches apart on a baking tray.
Place in a warm place covered with a damp cloth or oiled cling-film to allow to rise to twice the original size.
Bake in a preheated oven at 325oF for 20 minutes or until golden brown.

For Icing Cross
Mix icing ingredients into a smooth paste that can hold a peak when a finger is inserted into it and removed.
Pipe across top of cool buns.
