Cranberry Chocolate Chip Oatmeal Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 8oz brick margarine
  • 1 cup firmly packed brown sugar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon salt
  • 1 1/2 cups old-fashioned or quick-cooking oats
  • 1 package (12oz.) semi-sweet chocolate chips
  • 1 package (6 oz.) dried cranberries

Preparation

Prep time: 15 minutes
Bake time: 8 minutes
Makes 7 dozen cookies

1. Preheat oven to 375° F.
2. Combine flour with baking soda in a small bowl; set aside.
3. Mix margarine with sugar in a large bowl until light and fluffy (about 4 minutes). Mix in vanilla, egg, salt, flour mixture and oats on low speed just until blended. Stir in chips and cranberries.
4. Drop mixture by tablespoonfuls, 2 inches apart, on greased baking sheets. Bake 8 minutes or until edges are golden. (Do not over bake.) Cool on the cookie sheets for 2 minutes then transfer to wire racks and cool completely.
