  • Muffin/cupcake liners
  • 200 g all-purpose flour
  • Pinch of salt
  • 100 g Dorset Cereals Muesli
  • 230 g plain yogurt
  • 1 egg, beaten
  • 90 g light brown sugar
  • 80 ml skimmed milk
  • 80 ml vegetable oil
  • 100 g raisins or currants (optional)

Preparation

Place 12 muffin/cupcake liners in a muffin tin. Preheat oven to 350oF.
Into a large bowl, sift flour, baking powder and salt together.
In another bowl, mix the Dorset Cereals Muesli and yogurt together. Add the egg, sugar, milk and oil and stir to mix.
Mix the two bowls together until just combined and then add the raisins or currants lightly. Be careful not to overmix.
Pour the mixture into the muffin/cupcake liners and bake for about 20 minutes or until cooked. The muffins are cooked when a skewer inserted comes out cleanly.
