Fried Chicken with Mashed Potato

For Fried Chicken:

  • 8 chicken drumsticks
  • 2 cups buttermilk
  • 1 tbsp hot pepper sauce
  • 1 cup flour
  • 2 packs Bake 'n Fry shortening
  • Pinch of salt, black pepper, paprika
  • Minced ginger and garlic to taste

For Mashed Potato:

  • 2.2 lbs or 1 kg potatoes
  • 1 pack Golden Brand margarine
  • Pinch of salt
  • 1 cup milk
  • 2 carrots, grated
  • bacon strips (optional)


For Fried Chicken:
Slice into drumsticks and place in a deep dish. Combine buttermilk with pepper sauce and pour over chicken. Marinate overnight in the refrigerator.

Preheat oven at 375oF (190oC).
Put flour, salt, black pepper, paprika, ginger and garlic in plastic bag and mix well. Place the drumsticks, without excess buttermilk mixture, in the bag and sake them in the spicy flour mix. The chicken should be coated evenly with flour. Heat Bake 'n Fry shortening in a deep frying pan and fry the drumsticks in smal portions until golden brown.
Coat baking pan with foil or baking sheets and lay the chicken on it. Bake in the oven for 15 minutes.

For Mashed Potato:
Heat 1 tbsp Bake 'n Fry shortening in a pan and fry bacon until crispy. Set aside.
Boil peeled potatoes until soft and drain them. Mash potatoes with the Golden Brand margarine until smooth. Add salt, milk, bacon and grated carrots and mix well.

Serving suggestion:
Complete this meal with a fresh green salad.
