Ingredients

Rich Dark Chocolate Cake

½ Brick Blue Band
1 ½ margarine
¾ cups all-purpose flour
2 cups cocoa
1 cups granulated sugar
1 teaspoons baking soda
1 teaspoons baking powder
2 teaspoon salt
1 large egg
1 teaspoon vanilla essence
1 cup sour cream
¾ teaspoon white vinegar
1 cup raspberry jam (or jam of your choice)
1 cup icing sugar

Bake Time: 30 - 40 minutes
Serves: 16

  1. Heat oven to 350 degrees F. Grease two 8-inch-round cake pan with Blue Band margarine and line with wax paper.
  2. Combine flour, cocoa, granulated sugar, baking soda, baking powder, and salt together in a large bowl.
  3. Add eggs, vanilla, sour cream, vinegar (for leavening and more tender cakes), and 1 cup hot water and mix until batter is smooth.
  4. Pour batter into prepared pans and bake until a wooden skewer, inserted into cake centre, comes out clean (35 to 40 minutes). Cool cakes in pans 20 minutes; release from pans and cool completely on wire racks.
  5. Beat Blue Band margarine and jam together using an electric mixer set on medium speed until fluffy. Add icing sugar and beat until smooth. Spread filling between 2 cake layers and frost with chocolate frosting.
