Cheesy Grilled Chicken Pasta

- 1/2 lb Swiss Spaghetti (227g)
- 1 tbsp Kerrygold Salted Butter
- Kerrygold Cheddar Cheese
- 4 tbsp Carbonell Extra Virgin Olive Oil
- 1/3 cup Carbonell Stuffed Olives chopped
- 1/2 whole Red Onion diced
- 3 Garlic Cloves minced
- 1 can Diced Tomatoes with Juice (14.5oz)
- 1/3 cup White Wine
- 2 Boneless Chicken Breasts seasoned
Heat skillet over medium-low heat. Add 2 tablespoons Carbonell Extra Virgin Olive Oil, then the diced onion and cook for 5 minutes. Add garlic and cook for 1 minute. Pour in can of diced tomatoes and chopped Carbonell Stuffed Olives. Stir and cook for another minute or 2.
Splash in wine, then stir and simmer over low heat for 15 minutes, stirring occasionally.
In another skillet, heat 1 tablespoon Carbonell Extra Virgin Olive Oil and 1 tablespoon Kerrygold Salted Butter. Add the pre-seasoned chicken breasts and cook on both sides until golden brown. Set aside.
While sauce is simmering, cook the Swiss Spaghetti according to package directions. Drain & set aside.
Toss the cooked Swiss Spaghetti in the last tablespoon of Carbonell Extra Virgin Olive Oil and arrange on a platter. Mix in 3/4 of the sauce with the pasta. Sprinkle on desired quantity of shredded Kerrygold Cheddar Cheese and serve immediately.
