Mambo Chicken Quesadillas

- 2 cups cooked chicken shredded
- 1/2 cup Swiss Mambo Sauce
- 1 cup Swiss Sweet Kernel Corn drained
- 1 cup shredded cheese Cheddar or Mexican blend
- 8 flour tortillas
- 1/4 cup chopped fresh cilantro optional
- Olive oil for cooking
Mix shredded chicken with Swiss Mambo Sauce and Swiss Sweet Kernel Corn.
Heat a tortilla in a pan over medium heat.
Add chicken mixture and cheese to one half of the tortilla. Fold tortilla over to cover the filling. Cook until the tortilla is golden brown and the cheese is melted.
Repeat with remaining tortillas. Cut quesadillas into wedges and garnish with cilantro if desired.
