Jerk Pineapple Glazed Ham

Ingredients
  

  • 1 Blue Ribbon Picnic Ham

Pineapple Glaze

  • 1/2 cup Brown Sugar
  • 1/2 cup Honey
  • 1/4 cup Rum
  • 1 tsp Pepper of your choosing finely chopped
  • 3/4 cup Pineapple Juice

Jerk Seasoning Rub

  • 1 tbsp Garlic Powder
  • 2-3 tsps Cayenne Pepper
  • 2 tsps Onion Powder
  • 2 tsps Ground Thyme
  • 2 tsps Brown Sugar
  • 2 tsps Pepper of your choosing
  • 2 tsps Chili Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Cinnamon
  • 1 tsp Salt

Instructions
 

  • Defrost ham overnight.
  • Preheat oven to 325 degrees Celsius.
  • Remove skin from ham and pat dry with paper towels.
  • Combine all dry ingredients for Jerk Rub and rub spiced mixture all over the ham, you may need to double the Jerk rub recipe. Cover tightly with foil and bake for 1-1.5 hours.
  • While the ham is baking, in a medium saucepan, combine all glaze ingredients. Plan pan over medium heat and bring ingredients to slow boil. Once boiling, reduce to low heat and allow glaze to thicken. When Pineapple Glaze reduces by half, remove from heat and set aside.
  • After ham has baked for 1-1.5 hours, remove from over and increase heat to 400 degrees Celsius.
  • Brush glaze all over baked ham and then put back in oven for 15-20 minutes.
  • Remove and let rest for 5-10 minutes before cutting into it.
  • Decorate as desired with pineapple slices or other garnishes.
