Equipment

Ingredients
  

  • 4 boneless, skinless chicken thighs or breasts
  • 2 large bell pepper cut into strips
  • 1/2 cup HAPPI Parboiled Rice
  • 1 cup chicken stock (or broth)
  • 1 clove garlic minced
  • 1 tbsp lime juice
  • 2-3 tbsps finely chopped cilantro (or parsley)

For the Chicken Marinade:

  • 1 tbsp HAPPI SOYA BEAN OIL
  • 1 clove garlic minced
  • 2 tbsps fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp HAPPI SALT
  • 1/2 tsp chili powder
  • 1 tbsp finely chopped cilantro (optional)

For The Burrito Bowl:

  • 5 cups Romaine lettuce washed and dried
  • 1 can black beans drained and rinsed
  • 1 can HAPPI Whole Kernel Corn drained
  • 1/2 red onion chopped
  • 1 avocado peeled, seeded and sliced

For The Dressing:

  • 2 tbsps HAPPI Soya Bean Oil
  • 2 tbsps freshly squeezed lime juice
  • 1 tbsp finely chopped cilantro
  • 1 clove garlic crushed
  • 1/2 tsp HAPPI Brown Sugar
  • 1/4 tsp ground cumin
  • 1/2 tsp HAPPI Salt
  • 1/2 - 1 tsp red chili flakes (optional)

Instructions
 

Chicken and Bell peppers:

  • Cut chicken into strips.
  • In a large bowl, mix all marinade ingredients.
  • Mix in chicken and marinate for 30 minutes.
  • Heat a pan or skillet over medium-high heat.
  • Add a drizzle of oil to lightly coat the pan.
  • Sear the chicken and cook for about 7 minutes, turning frequently until cooked through.
  • Remove from the pan and set aside.
  • In the same pan, add the peppers (drizzle a little extra oil if needed), add salt and pepper to taste and cook till tender.

Rice:

  • Combine rice, chicken stock and garlic in a pot, mix well.
  • Cooked over cover low heat until liquid is absorbed and rice is cooked through.
  • Fluff rice with a fork and mix in lime juice and cilantro (or parsley) to taste.
  • Season with salt and pepper, if needed.

Dressing:

  • Whisk ingredients to combine.

Assembly:

  • Arrange lettuce, beans, corn, onions, peppers and rice into 4 bowls.
  • Add chicken.
  • Top each with avocado slices and drizzle with dressing.
