Ingredients
  

  • 3 Cups Lotus® Cassava and Wheat Flour
  • 3 Tsp. Lion Brand® Baking Powder
  • 1/2 Cup Margarine softened
  • 2 - 2 1/2 Cups Grated Coconut
  • 1 Cup Brown Sugar
  • 1 Cup Raisins
  • 1/2 Cup Red Cherries chopped
  • 1/2 Cup Mixed Peel
  • 1 Tsp. Mixed Spice
  • 1/4 Tsp. Nutmeg
  • 1/2 Tsp. Ground Cinnamon
  • 3/4 Cup Milk
  • 1 Egg beaten
  • 1 Tsp. Vanilla Essence

Instructions
 

  • Preheat oven to 325 degrees F.
  • Sift Lotus® Cassava & Wheat Flour and Lion Brand® Baking Powder together.
  • Add margarine, coconut, sugar, raisins, cherries, mixed peel, cinnamon, mixed spice, and nutmeg; mix thoroughly.
  • Combine milk, egg, and vanilla essence together.
  • Add liquid to mixture and mix well. Do not knead.
  • Pour into two greased standard loaf pans.
  • Bake in oven for 35-40 minutes or until tester comes out clean.
