Curried Stew Shepherd's Pie

Ingredients
  

  • 1 Whole Chicken cleaned & cut into quarters
  • 2 tbsp EVE Oil
  • 1 tbsp Curry Powder
  • 1 tsp Geera Powder
  • 2 tbsp EVE Brown Sugar
  • 1/2 cup EVE Coconut Milk
  • 2 Bay Leaves
  • 1 Lime
  • 1 Scotch Bonnet Pepper
  • 1 Celery Stalk chopped
  • 4 Pimento Peppers chopped
  • 1 Medium Onion chopped
  • 1 Chive Bundle chopped
  • 1 Carrot diced
  • 3 sprigs Thyme
  • 1/2 cup Onion diced
  • 5 cloves Garlic minced
  • 3 cups Water
  • Salt & Pepper to taste
  • 2 lbs Potatoes peeled & diced in large pieces
  • 1 cup EVE Evaporated Milk
  • 3 oz Margarine
  • 1 Egg Yolk
  • 1 cup EVE Cheese grated

Instructions
 

  • Cut chicken into quarters, wash with lime and water. Place chicken in a large bowl with all the pimento peppers, celery, chive, onion, garlic, carrots, thyme, salt and black pepper.
  • Let it marinate for 4 hours or overnight.
  • Put iron pot on a medium high heat then add the EVE Oil.
  • Place EVE Brown Sugar, curry power and geera powder and let it burn while stirring until sugar looks like a caramel colour.
  • Add seasoned chicken, stir until combines then cover and let it cook for 5 minutes.
  • Stir again then add the thyme sprigs, bay leaf, EVE Coconut Milk and hot pepper.
  • Pour in the water then cover and cook for 45 minutes to an hour or until the meat comes off the bone.
  • Add extra water if needed.
  • Let the mixture cool then pull the meat from the bones.
  • While meat cools, prepare the potatoes. Place potatoes in a large pot of water, season with salt, bring to a boil, cook until soft.
  • Drain potatoes then mash, add butter, EVE Evaporated Milk and egg yolk. Whisk to combine.
  • Put curried chicken at the bottom of the dish, fill until half way then top with the mash potatoes and EVE cheese.
  • Place pie in the oven at 300 degrees F and bake for 20 minutes or until cheese gets golden crust.
