Easy Shrimp Alfredo

Ingredients
  

  • 1 pack Swiss Penne Pasta cooked & drained
  • 1/4 cup Kerrygold Unsalted Butter
  • 2 tbsp Carbonell Extra Virgin Olive Oil
  • 1 Onion diced
  • 1 Sweet Red Pepper diced
  • 1 cup Mushrooms roughly chopped
  • 6 cloves Garlic minced
  • 1 lb Medium/Large Shrimp peeled, de-veined, tails off
  • 1 jar Prego Homestyle Alfredo Sauce 14oz
  • 1/2 cup Parmesan/Romano Cheese grated
  • 1/2 cup Heavy Cream
  • Cayenne Pepper
  • Salt & Pepper to taste
  • Parsley chopped, for garnish

Instructions
 

  • Heat a large non-stick pan over medium heat.
  • Once hot, add in Carbonell Extra Virgin Olive Oil and Kerrygold Unsalted Butter.
  • Once butter has melted, add in diced onions. Cook for about 3 minutes or until onions have started to soften.
  • Add in sweet red pepper and cook an additional 2 minutes.
  • Add in mushrooms and garlic.
  • Add in shrimp and saute until the shrimp starts to turn pink.
  • Stir in Prego Homestyle Alfredo Sauce, cheese and heavy cream and let simmer for 5 minutes.
  • Stir in spices. Taste and re-season if necessary.
  • Add Swiss Penne Pasta to the sauce.
  • Garnish with parsley (optional)
